Anzac Biscuits
Traditional oatmeal cookie recipe of the Australia – New Zealand Army Corp.
History: Now here’s a cookie with a story! During World War I, Australian womenfolk were naturally concerned over their men who fought in far-away places. Any food they sent to the fighting men had to be carried in the ships of the Merchant Navy. Most of these ships barely maintained a speed of 18 kilometers per hour and had no refrigeration. Food sent had to remain edible for periods of over two months. A group of women came up with the answer — a biscuit with all the nutritional value possible. The basis was an old Scottish recipe using rolled oats. By the time it was all over, the Anzac cookie (Australian and New Zealand Army Corps) had become a perennial favorite and you can enjoy it in its purest form from Russian Cookie House.
Ingredients: Oats, Flour, Dessicated Coconut, Butter, Brown Sugar, Fructose Syrup, Sodium Bicarbonate, Raisins
